World Vision Cinnamon From Vietnam
I received this cinnamon from World Vision. It comes all the way from Vietnam in a hand-carved cinnamon bark box with Asian signs for prosperity. I used this cinnamon for a recipe to make Banana-Cinnamon Muffins for the kids for breakfast.
Prosperity Cinnamon: Vietnam’s renowned sweet cinnamon is a renewable resource collected from the Cassia tree, sold to benefit generations of hard-working families. You can find it in the World Vision catalog as well as baskets, purses, jewerly, coffee, and more from all around the world.
Each container comes with 3 oz of Prosperity Cinnamon.

- Muffins:
- 2/3 cups sugar.
- 1/2 cup apple sauce.
- 2 eggs.
- 2/3 cup mashed very ripe bananas (aprox 2 bananas).
- 1 2/3 cups all-purpose flour.
- 1 teaspoon baking soda.
- 1 teaspoon vanilla extract.b
- 1/2 teaspoon salt.
- 1/2 teaspoon cinnamon. (I used more but I really like cinnamon).
- Topping:
- 1/4 cup sugar.
- 1/2 teaspoon ground cinnamon.
- 1/4 cup butter or margarine- melted.
- Heat oven to 375 degrees F. Grease bottoms of muffin cups.
- In medium bowl mix sugar, apple sauce and eggs with wire whisk. Add in bananas and vanilla extract. Stir in remaining muffin ingredients.
- *Topping ingredients are used after the muffins are baked
- Fill muffin cups 2/3 of the way full and bake 15-19 minutes.
- In a small bowl mix the the sugar and cinnamon (topping ingredients).
- In a second small bowl have butter melted.
- When muffins are done remove from muffin tin, let cool about 3 minutes, then dip tops into butter then into sugar/cinnamon mixture and set on plate.
- Serve warm.
