Weight Watchers Apple Broccoli Salad
As a diabetic I love making salads. I try to eat a salad every day for dinner and sometimes for lunch (and yes, it makes a huge difference with my blood sugar). But a regular old greens, carrots, celery, tomatoes, topped with salad dressing gets old. Finding new salad recipes that are low-carb and my kids will eat isn’t always easy. But this one, this Weight Watchers Apple Broccoli Salad is amazing. For me, I will add fewer grapes, since they are sugar (yes, natural, but I still watch my carbs). The kids love it how it is. Not only that, it is super easy to make and the kids can help me. Total prep time is about 10 minutes. Even less if I get the kids to help me and we make it together. This can be made ahead and refrigerated overnight (but you might want to wait and add the cheese right before you eat it). It is a great dish to bring to potlucks and barbecues too. Warning- make sure you make enough. It’ll be gone fast! You can add variations that suit your family. I like the broccoli pieces smaller so they can fit in my mouth as a bite and I like to make sure the vegetables and grapes are refrigerated before making so I can serve immediately and it’ll be cold.
How To Make Broccoli Apple Salad
Directions:
Mix these ingredients in a small bowl: Greek yogurt, sugar, and vinegar.
Stir until mixed- do not overmix. Dice vegetables and cheese. Thinly slick cabbage. Mix in large bowl. Pour yogurt mix over salad and toss to evenly coat.
Serve immediately. Can be used as a main course or a side dish. You can always make more for 4th of July or the next party.

- 1 medium head of broccoli, chopped into small pieces.
