I love making meals with chicken. It can be used in a ton of different ways from casseroles to crockpots, soups and salads. It is important to me to buy healthy, antibiotic-free meats when cooking and Foster Farms chicken is all that and more. It is also from California so the meat is always fresh and never frozen. Creating meals is something I enjoy, especially when the kids rave about the meal and ask for seconds. This one is a favorite of mine. A total comfort food and it can be made in the crockpot too. The recipe below is a crockpot one but you can do it in a pan if you prefer. For me, with sports, music, field trips, board meetings, etc. I don’t want to come home and go stare blankly in the fridge to figure out what we are having for dinner. I like to throw the chicken with some seasoning or marinade in the crockpot bowl (not the whole thing with the cord) in the fridge the night before and around lunch time put the bowl in the base and plug it in. My New Comfort Food Meal
When I shop for perishables (meats, dairy, produce, bakery dept) I want things that are fresh, organic or antibiotic-free, and locally raised or grown. This has changed for me over the years, as I’ve become a mom and been more environmentally aware and health conscious. I love cooking with chicken since it is easy and healthy. For me, as a diabetic, I also like that this is low-carb and something that is delicious. As I change my comfort foods have changed from sweets to fresh and healthy meals. I now have a salad with every dinner. I have a garden in my backyard to get fresh and organic ingredients. I try to cook at home and not eat out. Having a new comfort food of easy tacos makes meal planning easy and dinner times is something I can do on busy days while keeping the meal healthy.
