Slow Cooker Chicken Tortilla Soup

 Made with ingredients from Del Real Foods. Including Pollo Asado (grilled chicken leg meat), Frijoles Negros (black beans) and Salsa de Molcajete Roja (spicy red sauce).

This is an easy recipe, taking about 15 minutes to prepare, and great for busy nights with sports practices and board meetings.  Feeds about 6 people.  I love adding grilled cheese too, especially on cold nights.  This recipe is very flexible so feel free to add more of what you like and less what what you don’t.  I decreased the corn since I’m diabetic but added more cilantro, bell pepper and tomatoes.  Celery is not traditionally added to chicken tortilla soup but I added it in for extra flavor and more vegetables. If you are a gardener find ingredients you have from outside and add them in for extra freshness.

Most of the ingredients and a big pot or slow cooker. Having fully cooked meat decreases cooking time and I also added fewer seasoning to the recipe.  The broth was one I had in my deep freezer from last time I cooked a full chicken. Tip for gardeners- put chili powder on your vegetables and ground fruits (like strawberries) in your garden to keep animals from digging by your plants.  It also keeps them from going to the bathroom near the plants.
