Okay, so I combine two recipes and made a new meal tonight. First time and the kids loved it. My son even had seconds. I’m going to try to keep this organized and print both.
1- Sloppy Joe Biscuit Casserole by Manwich. Printed from Albertson’s.com. You can see the original recipe on the link (had corn and ground beef and I didn’t have corn at home and used turkey burger). The big difference is it called for a can of refrigerated biscuit dough and I made the biscuits from scratch (will post recipe for that next).
Spray baking dish with non-stick cooking spray.
*1 Pound ground turkey burger (I used extra lean).
* Sliver of chopped up bell pepper.
* Slice of chopped up yellow onion.
* 2-3 chopped up garlic cloves.
* 1 can Sloppy Joe Sauce.
* 1 can pork and beans.
* Dozen uncooked biscuits (recipe below).
Brown meat. Drain. Add chopped garlic, onion and bell pepper. Stir all up and then add Sloppy Joe sauce and beans. Stir and cook 3-4 minutes.
Pour mixture into baking dish and even it out smoothly.
Make biscuits into small balls and place all around, on top of the mixture.
Brush biscuits with butter.
Bake 10-12 minutes or until biscuits are golden brown.
2- Biscuit Recipe. I got this recipe from “The $5 Dinner Mom Cookbook.” I’ll post the Amazon link below. I got the book from the library, as well as the ‘breakfast and lunch’ version but think I like them so much I’m going to buy both.
Cloverleaf Dinner Rolls
* 1 cup hot water.
* 3 cups flour.
* 1 Tablespoon active dry or packet yeast.
* 1 Tablespoon sugar.
* 1 teaspoon salt.
* 1 Tablespoon oil.
2 Tablespoons butter (to be used after they are done or to brush on top).
In mixing bowl, combine the hot water and 1 cup of the flour.
Add yeast, sugar, salt and oil. Whisk until ‘spongy’ dough.
Let sit 10-15 minutes (away from drafts).
Add the remaining 2 cups of flour to the dough.
Stir with wooden spoon (sorry- I used a fork).
When the dough is too thick to mix, knead by hand for 6-8 minutes.
***Recipe calls for the dough to rise, double in size, and let rise again. I skipped this***
Form dough into walnut-sized balls.
Place on top of Sloppy Joe Casserole mixture. Spread them out so they will expand a little as they bake.
Brush tops with butter.
Place in preheated over for 10-15 minutes.
Dinner is done when the biscuits are cooked.
According to cookbook the dinner rolls cost 97 cents for 12 rolls.
(The dinner rolls recipe also has directions if you have a bread machine).
Serve with a salad.

After it came out. Some is missing. While it was cooling off on the stovetop my son snuck into the kitchen and ate two servings.
