Pork Chops With Berry Sauce Recipe
I found this recipe in a cookbook but it had apricot sauce. I neither had fresh apricots nor apricot jam so decided to use what I had on hand and make my own. It was surprisingly easy to make although daunting (I’d never made a fruit sauce before). Whole thing took about 10 minutes to prep and 30 minutes to cook. I added apple sauce, like I normally do with pork chops, but the meat was so tender and juicy that the apple sauce wasn’t needed. I also added a side salad. I try to have a salad with every lunch and dinner since it helps keep my blood sugar low.

Blackberry Jam from Knott’s Berry Farm.
Added to pork chops as they cook (seasoning was added first).
Added some fresh cut green onion from my garden.
Add a salad and apple sauce.
