Organic Pumpkin Bars Recipe
This is a fun recipe to make any time of year. Who says you have to wait until fall for pumpkin desserts? These pumpkin bars are so moist and flavorful. You can have with a glass of milk or on their own. The frosting adds a nice sweetness to them too. My kids aren’t huge pumpkin fans and they liked these pumpkin bars (even asked for seconds). The kit is from Scratch & Grain Baking and I added the necessary ingredients to create these yummy bars.

Almost everything came in the box for the recipe. I had to add oil, eggs and water. Plus cream cheese for the frosting. I totally forgot the butter for the frosting but think the recipe is fine without it. I think it made the frosting thicker but I had a lot left over so that is fine with me.
Instructions:
- Make pumpkin puree. Combine pumpkin powder and 2/3 cup hot water (not boiling) in large bowl. Cover with a cloth or hand towel and let sit 10-15 minutes.
- Preheat over 350 degrees.
- Grease and flour 9×9 pan.

- Add 1/2 cup oil.
- 2 eggs.
- Baking soda, salt, cinnamon, cane sugar and pumpkin pie spice.
- Blend in flour until smooth and no lumps are present.
- Pour batter in 9×9 pan.
- Bake 30-35 minutes (check by inserting toothpick in the middle).
- Let cool 15-20 minutes.
Frosting:
- Using a mixer add 8 oz softened cream cheese, 4 Tablespoon butter (I forgot the butter and the recipe worked out fine).
- Add vanilla powder and then powdered sugar.
Frost, cut and serve.
Great with a glass of ice cold milk.

It can be cut in rectangle pieces, like bars, or square cake-like pieces. The frosting is amazing and really ties it all together. My son hates pumpkin-everything and ate these! Add a glass of cold milk and you have a delicious dessert.
