Mini Fruit Pizzas Recipe
If you haven’t made fruit pizzas before than you are missing out! These are easy to make (and fun to eat) and something the kids can help with or do on their own. Great to serve at parties or bring to a potluck too. I love how colorful they are. Great way to celebrate the beginning of summer especially with so many fruits in season. I try to get them fresh from local farmer’s markets and buy them only 1-2 days ahead, for ideal freshness. If you are planning to bring the fruit pizzas to a party you can cut most fruit ahead of time and even bake the sugar cookies the night before. If you want to make your how homemade sugar cookies, you can do that with an easy recipe like this one. I like to get fruit in an assortment to make the fruit pizzas look colorful. Having the kids help prepare these might make them want to eat them more. This is a good way to try to sneak on some fruit your kids have never tried or think they don’t like. Make sure you don’t try to do these at the last minute since the mix needs one hour to chill (after mixing) in the fridge before spreading it on the cookies. After they are made you can put them in tupperware to keep cool and store in the fridge for a few hours, until you are ready to eat them. (Scroll down for a printable recipe).
Ingredients:
1 roll of Sugar Cookie Dough.
2 (5 oz.) containers of Low-Fat Vanilla Yogurt.
4 oz. of Cool Whip.
1/2 a box of Vanilla Instant Pudding Mix.
Variety of favorite fruits (sliced).
Start by combing your yogurt, cool whip, and instant pudding mix in a mixing bowl.
Mix until smooth and refrigerate for one hour.
Next bake sugar cookies according to instructions and let cool completely.
Icing each cookie with chilled fruit dip.
Top with sliced fruit of your choice.
Serve and enjoy!
Sugar Cookies
Get a variety of fresh fruits and cut them up. Small things, like blueberries, you can leave whole.
Let the cookies cool. Add the mix, chill and spread on top. Add fruit.
They are ready to go! Make sure you make enough Fruit Pizza for everyone. They’ll disappear fast.
