- Batter:
- 1/2 cup softened unsalted butter.
- 1/2 cup sugar.
- 2 eggs.
- 3/4 cup applesauce.
- 1 3/4 cup flour.
- 1 Tbsp baking powder.
- 1/2 tsp salt.
- 1/2 tsp vanilla extract.
- For topping:
- 1/2 cup melted butter.
- 1/4 cup sugar.
- 1/4 tsp cinnamon (or more, depending on how much you like).
- Preheat oven to 350 and lightly spray pan with cooking spray.
- Cream butter and mix with sugar until light and fluffy.
- Add eggs and applesauce.
- Combine flour, baking powder, salt and vanilla extract. Add to batter and stir gently.
- Bake 10-12 minutes or until browned and cooked.
- Remove from oven, let cool and put on a plate.
- Melt butter in a bowl and put sugar/cinnamon topping in a second bowl.
- Dip the tops or each muffin into the butter and then the sugar mix.
