Chocolate-Dipped Peanut Butter Banana Bites
These were easy to make, nice bite-sized treats, and the kids enjoyed helping. I love that I had all the ingredients in my house. Perfect for parties if you add a toothpick (to stab them with). The recipe is only four ingredients and the prep time is about 15 minutes. You can make them ahead and keep them refrigerated too. That way you can serve them at a party or for dessert without having to spend the time while you are rushing to get ready. The total time to prepare is a lot longer, since you need to freeze them for over an hour, twice. Plan ahead for this. There is a lot of variety you can do with this too. I mostly dipped the corners for the bites. You can do 1/2 or even the whole thing. Have other toppings (like sprinkles or other nuts). Try Nutella instead of peanut butter. I love how versatile this recipe.
Peanut Butter Overload Madness In 3-2-1…!
You can use any type of peanut butter you want for this. I used Crazy Richard’s Peanut Butter. I tried the creamy and crunchy (just to see how each would work). Both were delicious. I like the crunchy better. The kids the creamy. I used ripe bananas from the grocery store and sliced them up. The other ingredients are chocolate chips and crushed nuts.
Get out a cookie sheet and line with parchment paper. Make sure the cookie sheet isn’t too big! You need to be able to fit it in your freezer.
Slice the bananas and spread a small amount of peanut butter one one slick and top with another one. Don’t make the slices too big (hard to grab) or too thin (they fall apart easily when trying to dip).
Keep going. You can be neater than I was. I’m not one for aesthetics when cooking. I just like making good tasting food.
Keep going until you do two to three bananas.
Put in freezer for about one hour. This will make it a lot easier when dipping them into the chocolate. Meanwhile add some nuts to a food chopper or blender. If you don’t have one you can finely chop with a knife. I have had this one from T-Fal for years and love it. If kids help do not let them handle the blades. They are very sharp.
You can decide how fine you want the nuts. I like them really small so they stick better to the chocolate.
Melt the chocolate chips in the microwave. Do not overheat. Melt in 15 second increments, taking the bowl out to srit each time. If the chocolate is clumpy you can add a splash of vegetable oil. Do not add water.
Get your area ready. Have the bananas out of the freezer, the nuts close and the chocolate warm and melted. You’ll do it all at one time without setting.
Get another cookie sheet and line it with parchment paper. This will be to put the completed ones on. If you don’t have two cookie sheets slide the first piece of parchment paper off, onto the counter top and reuse the cookie sheet.
Pick up a bananas bite, dip in chocolate, dip in crushed nuts and place on parchment paper. Repeat until done.
Place them back in the freezer.
Keep in freezer approximately 1 hour or until completely frozen. They will be messy if the kids help!
They were heavenly to eat! The crushed nuts added a nice texture to them.
If you are storing for longer they should be kept in sealed container in the freezer.
If they start to defrost before being eaten they will be a little messy. I recommend toothpicks to pick them up.
