Celebrating Valentine’s Day As A Single Mom
Valentine’s Day means something different being a single mom. It is not a sweetheart romantic day of candles and wine but that doesn’t mean we can’t celebrate Valentine’s Day. Kids bring Valentine’s to their friends, right? So why not have fun at home too. Since my kids were little I’ve done fun things for all holidays with them. Not all necessarily mean high-priced gifts that break the bank. But I like to make them fun, meaningful days for them to remember as they grow up.
Valentine’s Day Breakfast
This can be as fun and elaborate as you want, or a simple. I like to add red to a few foods. Heart-shaped pancakes with a little red food coloring in the batter. Strawberry smoothies. I’ve tried to be creative and make red eggs but they kids didn’t want to eat them (just shows how much food is about appearances for them to eat it).
I also give them some gifts for Valentine’s Day but if there is chocolate or sweets they can’t have them until after lunch, or after dinner for dessert. A card is always a great gesture and I love giving the kids flowers. This year I got flowers from BloomThat. I was able to enter my zipcode and pick from a variety of flowers. Delivery came in two days. I love beautiful flowers. Why wait for a boyfriend to get flowers? I believe happiness comes from within. So, if I like flowers, I buy them. On the same token, I don’t mind buying a guy flowers. My kids might think I’m crazy sometimes but they loved receiving the flower delivery!
These ones also came with some chocolates and a personalized card.
Valentine’s Day Lunch
Lunch we have sandwiches with the bread cut into heart shapes. Heart-shaped Garden Veggie chips by Sensible Portions. The whole lunch-sized chip bag has mini hearts. They are great for kids to give as Valentine’s Day Cards too, since the bottom-front of each bag has a To: and From: on it with a space to write a friend’s name. Best thing about them- the chips have no artificial flavors or preservatives and no trans-fat. I like finding food with ingredients I can pronounce and recognize.
For drinks I have a few sparkling waters from Cascade Ice. I can choose the flavors that are red and serve them in a clear glass. I love the variety of flavors in these drinks and they are zero calories, zero carbs, no sodium, no caffeine and no sugar. Adding more red or hearts to lunch is easy. I can cut strawberries into hearts, add some red apple or plum slices and even make heart-shaped cookies.

The kids also made Valentine Cards with treats for their friends. Right now Welch’s Fruit Snacks have a ‘To/From’ on them so they can be shared with friends and loved ones. Here is an adorable one that was made for me. The fruit snacks are heard shaped and are great for kids to hand out at school or park days.
Valentine’s Day Dinner
I love making spaghetti with a red sauce, of course! The kids enjoy it and it is a quick dinner. Adding a salad with cherry tomatoes and garlic bread complete the dinner.
Valentine’s Day Dessert
Chocolate covered strawberries are always fun to make and eat. I like buying fair-trade chocolate from Honduras Chocolate Company. They have a range from 65-80% cacao and are nut and soy free, vegan, gluten-free and non-GMO.

After the kids are in bed and asleep it is my ‘me time.’ Time to get some things caught up around the house, go through emails, watch some tv and relax. I also get the opportunity to try out an awesome new drink called Gold Apple from Strongbow. This is a delicious hard apple cider with real apple juice in it. It is lightly carbonated and very tasty. That is so cute. Those flowers are amazing! I would love to get those for Valentine’s Day even if I sent to myself. Flowers always make me smile. I love that you make yummies that are red colored. I think I am going to steal your idea about red pancakes. That would be fun.
