The cheese class started and we all listened as James charmed us with his knowledge of cheese making he learned as a child, mixed with science and detailed explanations. The class was a little over two hours long and we learned about the necessary tools and supplies, sterilization, ingredients, some history of different cheeses and where they come from, and how to make ricotta and mozzarella cheese. Directions were printed on paper for us to take home for both types of cheese and we checked them off as we learned from the instructor.
People came from all over to attend this class. Some as far as Oxnard and Los Angeles. Some people came with a friend or family member as well. The woman sitting next to me said she had taken a beer making class a few weeks before and this was her second class at Simi Valley Home Brew.
During a time the cheese had to sit for a little while we mingled and explored the shelves of the store. They offer three different at-home cheese kits as well as individual supplies.
When the cheese was done everyone was invited up to try a piece or two.
