Honey-Glazed Carrots Side Dish
I love honey-glazed carrots but have never tried to make them at home. I try to make sure lunch and dinner has vegetables at the table and thought I’d branch out from a dinner salad and make some new recipes. My kids prefer carrots raw rather than cooked or steamed but this recipe went over well. It is only three ingredients and was easy to make too. I used the honey I received from Bee K’onscious and used the sage honey from California. I also have the Organic Cipo Uya from Brazil and the Clover honey from Montana to try out. This recipe did call for 2 Tablespoons of honey so if you are doubling the honey-glazed carrots recipe for company make sure you have enough honey on hand. Honey-Glazed Carrots Recipe
First you place carrots in 1 inch of water in a saucepan. You can use a 1lb bag of pre-cut baby carrots or buy carrots and peel and slice them first.
Heat to a boil.
Reduce heat to a simmer.
Cover with a pot lid.
Leave for 10-15 minutes, until tender.
Add honey and butter to the carrots in the saucepan.
Cook for 1-2 minutes, until butter is melted.
Stir frequently.
Carrots will be glazed from the honey.
Remove from heat and add to a serving dish.
Sprinkle with nutmeg (optional).
I also added some cilantro for garnish.
I added them to our dinner of flatbread pizza and both were a great hit. I used the cilantro for both recipes. The carrots went over well and only took about 25 minutes to make, including prep time. I noticed they didn’t taste as well reheating them the next night so I’d recommend making a smaller serving and if you want to eat it again to just make the recipe again. That way the meal is hot and fresh and the carrots aren’t too squishy. You can try it with different types of honey to see which one your family likes the best. Having the honey-glazed carrots on the table in a serving dish is a great way for the kids to serve themselves and decide how much they want to eat.
