Easy Cheese Stuffed Mushrooms
I love stuffed mushrooms and have had them at parties but his was my first time trying this recipe. I made them for my best friend’s potluck birthday party and it was a huge hit. I love mushrooms and know she does too and wanted to make an appetizer that would be a party pleaser. I found the recipe online and adapted it to my liking (not spicy, easy to make). I was afraid of serving them cold so I actually make them, brought them to the party on a cookie sheet with foil on top and then threw them in the oven at the party. That way there were hot with the cheese all gooey when I served them. They were gone in minutes (should have made more) and they were cheap to make. I especially like making dishes where I have all of the seasoning and extra ingredients. I knew I had to go to the store for the mushrooms and cheese but everything else I had at home, including cilantro from my garden.
Empty Mushroom Cups
First of all, wash your mushrooms. Scrub them good. Mushrooms are often covered with soil when purchased and need to be cleaned. Remove the caps from the stems while cleaning so you can get inside the caps. Pat dry or let air dry. Next place caps upside down on a cookie sheet. You can make as many as you want. They can be packed closer on the cookie sheet. Make sure the cookie sheet has edges around it so there is nothing dripping off the sides in the oven.
Let’s Get Cheesy
The cheesy stuffing is super easy to make. I was worried about the flavor since it was my first time making them. Next time I make them I might experiment around and try a sharp cheddar. Regardless, they tasted amazing.

Added bonus- the recipe is low carbs. I’m not saying it is super healthy with the cheese, butter and cream cheese but it is definitely really low in carbs. - Mushrooms.
- Cream cheese.
- Butter.
- Mild Cheddar Cheese.
- Green Onion.
- Cilantro.
- Seasoning. (I used a dash of salt and pepper).
- Preheat oven to 300 degrees.
- I used one package of mushrooms.
- Wash mushrooms and remove stems.
- Pat dry and put on plate to dry more and set aside.
- Finely chop green onion and mushroom stems (I threw in the mushrooms I broke too).
- Use cheese grater to get about 1 cup of cheddar cheese. Set 1/8 of a cup aside.
- Soften cream cheese and mix all ingredients together to make a cheesy mix that is thick, like a spread.
- Stuff mushrooms with mix.
- Top off with a little more shredded cheese.
- Put stuffed mushroom cups on cookie sheet and bake for 20 minutes or until everything is soft and well heated.
- You can add anything you want in the mix. One friend said she added crushed Saltines. Red Peppers. Paprika. etc.

These were easy to make. Cheap ingredients and were a total party hit!
