Jelly Donut Muffins

Jelly Donut Muffins

These muffins were super easy to make and they are great for breakfast, dessert or just a mid-day treat.  I had the kids help make them and while it was a little messy, we had fun in the kitchen and had a sweet treat afterwards.  When making these make sure you let them cool off a little before eating them since the jelly inside gets hot.  They are definitely delicious served warm.

I first started with a basic muffin mix.  This mix can be used for other types of muffins too (we used leftover batter to make Blueberry Walnut Chocolate Chip muffins).

Line Muffin tin with silicone cupcake liners or use cooking spray. For the butter we used Organic Ghee Clarified Butter by Carrington Farms.  They also have cooking oils and cooking oil spray.

The kids were a little messy.  The recipe asks for 1 teaspoon of jelly or jam to the middle.

Jelly Donut Muffins

Ingredients

  • 2 cups flour.
  • 2 large eggs.
  • 1 cup milk.
  • 1./2 cup sugar.
  • 6 Tablespoons butter (we used Organic Ghee Clarified Butter).
  • 4 Tablespoons Strawberry Jam. *You can use other flavors of jam too.
  • 1 Tablespoon baking powder.
  • 1 tablespoon vanilla extract.

Instructions

  1. Preheat oven to 425 degrees.
  2. Spray cooking spray in tin or line with cupcake liners.
  3. Mix flour, baking powder and sugar in large bowl.
  4. In separate bowl beat eggs then add milk, melted butter and vanilla extract.
  5. Mix ingredients from both bowls together. Do not overmix.
  6. Spoon one heaping spoonful of batter into each muffin tin.
  7. Add one teaspoon of jelly.
  8. Top with another heaping spoonful of batter.
  9. Bake in oven for 18 minutes or until firm.
  10. *Optional: brush tops with melted butter and sprinkle sugar on top.
