Chalkboard Rice Krispies

These chalkboard rice krispie treats are great for the first day of school or to celebrate the 100th day of school.  Make for the kids when they get home.  Make with the kids if you homeschool. You can even send with them to classes.  They are easy to make, adorable and delicious.  You can even take this idea and make Rice Krispie treats that say something else, like make them for Christmas or Valentine’s Day.  The recipe is below for you to print.

 The ingredients are simple and cheap.  This is a project you can have little ones help with too.

chalk board rice krispie treatsFirst make rice krispie treats like you normally would (recipe below).  After they are cut you can coat the top of them with chocolate.rr-1 Next cut some Air Heads into long strips.  Kitchen scissors will work fine.  You can do these in red, blue, green or all three colors.r-10

 Once the black chocolate is dry add the strips to the top of the rice krispie treat, overlapping on the corners.chalkboard rice krispie treats

This recipe will yield 6 Chalkboard Rice Krispies:

INGREDIENTS
9×9 pan Rice Krispies (recipe below)
1 Tablespoon solid shortening
1 cup Wilton black candy melts
2 large red Airhead candies
2 large blue Airhead candies
2 large green Airhead candies
White icing tube

RECIPE FOR RICE KRISPIES

1 cup (2 sticks) butter
Two 10 oz. bags of marshmallows 
10 cups Rice Krispies cereal

DIRECTIONS FOR RICE KRISPIES
1.   Spray a 9×9 pan with a non-stick coating spray and set aside.
2.   In a large sauce pan, melt the butter over low heat.
3.   Add the marshmallows to the butter, stirring constantly until melted.
4.    Remove from heat and stir in the cereal until well-coated.
5.   Transfer the cereal mixture to prepared pan and press down firmly. 
6.   Cool for 30 minutes and cut into 6 large bars.

HOW TO DECORATE

1.   Line a cookie sheet with wax paper and place the 6 Rice Krispies bars on the sheet. Set aside for later.

2.   In a microwave safe bowl, microwave 1 tablespoon solid shortening for 45 seconds or until melted. Add the black candy melts and stir until melted. (You may have to microwave in additional 10 second increments until the candy is smooth and melted).

3.   Dip the tops of the Rice Krispies bars into the melted black chocolate and place back  on the cookie sheet for 30 minutes to harden. Or, if you find it easier, you can just use a spatula to spread the melted chocolate on top of each bar.

4.  To make the border around each chalkboard, cut each candy Airhead into 4 strips.

5.  Lay the strips along the outer edge of each Rice Krispies bar and gently press down. (You may have to trim the pieces depending on the size of your bars).  They will easily stick to the Rice Krispies treats thanks to the gooey marshmallows.

6.  With the white tube of icing, pipe your favorite back to school phrases on the chalkboards.

7.   ENJOY!!

While we don’t have cool enough weather in Southern California to grow apple trees, we do have an abundance of them at the grocery stores.  my favorite are Gala and Honey Crisp.  For those of you that love fall and want to enjoy some delicious apple recipes, check out these two easy ones.  I’m jealous of those that have apple trees in their yard but happy I can still create these desserts at home.  They are great for Thanksgiving and Christmas too and easy to transport for a potluck.

Viki’s Granola Baked Granola Apple

Ingredients:

3 tablespoons cold butter, diced
3 tablespoon dark brown sugar
½ teaspoon brown sugar
Pinch of salt
4 apples, washed and dried
1 cup of Viki’s Granola Apple Cinnamon
Vanilla ice cream
Directions:

Preheat oven to 375°. In a bowl combine butter, brown sugar, cinnamon and salt. Take good care to mash everything together with a fork. Use a melon baller, apple corer or paring knife to remove apple cores; don’t go all the way through. Place apples in a small baking dish and fill with butter mixture and bake for 30-40 minutes. I’ve never heard of an ice cream recipe that had olive oil in it but just check it out!  Once you bake it you’ll understand how awesome it is and how all the ingredients fit nicely into this sweet treat.

Gaea’s Baked Pears with Chocolate Ice Cream and Olive Oil

Ingredients:

1 pound semi-sweet chocolate ice cream
2 3/4 tablespoon butter
4 tablespoon brown sugar
8 pears, peeled and cut in half, seeds removed
Juice and zest of 1 orange
Black peppercorns
4 Tbsp. Gaea Kalamata D.O.P Greek Extra Virgin Olive Oil
Directions:

Place shallow pan over heat and add butter and sugar. Stirring constantly over low flame, allow mixture to caramelize. Add pears and turning over frequently cook them for about 10 minutes or until they caramelize. Add orange zest and juice and remove pan from heat. Place a large scoop of chocolate ice cream in each bowl, arrange 2 pears around it together with the pan liquid. Sprinkle with black pepper and drizzle pears with 1 Tbsp. of olive oil.olive-oil

Serves: 4 // Total Time: 10 minutes
Ingredients:
Sparkling Ice Kiwi Strawberry
3-4 Fresh Strawberries, hulled
5-6 Fresh Blackberries
Garnishes: Sugar for Glass Rim, Pop Rocks, Dry Ice (optional), Fresh Sliced Kiwi.

Directions:
Blend the strawberries and set aside. Rim a glass with colored sugar of your choice. Smash blackberries at the bottom of the glass. Add the blended strawberries and sliced kiwi. Fill the glass with Sparkling Ice Kiwi Strawberry and add a pinch of Pop Rocks. Drop three small pieces of dry ice (optional) as garnish.

Ingredients:
2 Cups Sparkling Ice Cherry Limeade
1 1/2 Cups Raspberry Sherbet, Softened
Garnishes: Pink Cotton Candy, Sugar for Glass Rim

Directions:
In a large mixing bowl, combine Sparkling Ice Cherry Limeade with Raspberry Sherbet. Mix on low speed with a blender or electric mixer until it’s well incorporated. To serve, pour into sugar-rimmed glasses and garnish with a small amount of cotton candy!

Serves: 6 // Total Time: 8 Hours, 15 mins
Ingredients:
2 Cups Whole Milk French Vanilla Yogurt
1/4 Cup Sparkling Ice Black Raspberry
5-6 Fresh Blackberries, cut in half
6 Fresh Raspberries, cut in half
Edible Glitter, Sparkling Colored Sugar

Directions:
In a small bowl, combine 1/2 cup yogurt with Sparkling Ice Black Raspberry; mix well and set aside. Add a layer of vanilla yogurt to the bottom of each popsicle mold. Add a layer of yogurt/Sparkling Ice Black Raspberry mixture and add 3-4 pieces of fruit to the mold. Finish each by dividing the remaining yogurt among the popsicle molds; use a knife or wooden skewer to swirl the mixture slightly. Insert popsicle sticks and freeze for at least 8 hours, or until completely frozen.

Before serving, run popsicle molds under warm water to release the popsicles. Allow popsicles to sit at room temperature for 2 minutes and immediately sprinkle or brush with edible glitter or sparkling sugar. Serve immediately or return to freezer until ready to serve.

Super Easy Chicken Tacos Recipe

I love making meals with chicken.  It can be used in a ton of different ways from casseroles to crockpots, soups and salads.  It is important to me to buy healthy, antibiotic-free meats when cooking and Foster Farms chicken is all that and more.  It is also from California so the meat is always fresh and never frozen.  Creating meals is something I enjoy, especially when the kids rave about the meal and ask for seconds.  This one is a favorite of mine.  A total comfort food and it can be made in the crockpot too.  The recipe below is a crockpot one but you can do it in a pan if you prefer.  For me, with sports, music, field trips, board meetings, etc.  I don’t want to come home and go stare blankly in the fridge to figure out what we are having for dinner.  I like to throw the chicken with some seasoning or marinade in the crockpot bowl (not the whole thing with the cord) in the fridge the night before and around lunch time put the bowl in the base and plug it in.  Then when we come home we have the meat done and just need to add the other ingredients, like tortillas, sour cream, beans, lettuce, salsa and fresh cilantro.  You can also make this a burrito. You can season to your taste on how spicy you like the meat too. This recipe is very flexible and something to enjoy after a long day.

Super Easy Chicken Tacos Recipe

Ingredients

  • 6 Tablespoons taco seasoning mix.
  • 1 cup chicken broth.
  • 1 cup medium salsa.
  • 2 lbs Foster Farms Simply Raised Boneless Skinless Chicken Breast.
  • After meat is cooked you'll need all the ingredients and garnishings for tacos:
  • Tortillas.
  • Cilantro.
  • Salsa (because you can never have too much).
  • Fresh diced tomatoes.
  • Diced avocado.
  • Sour cream.
  • Beans (refried or black).
  • Lettuce.

Instructions

  1. Spray the inside of the crockpot with non-stick cooking spray.
  2. In medium sized mixing bowl add in broth, salsa and taco seasoning. Mix until taco seasoning is dissolved.
  3. Put chicken in crockpot and pour mixing bowl ingredients over the top. If the chicken is stacked make sure you get around all the pieces.
  4. Put lid on crockpot and cook on low for 4-6 hours.
  5. With two forks or meat claws shred chicken meat.
  6. Put in a serving bowl and put out with the tortillas and other ingredients.
  7. You can also save 1/2 of the meat for a future meal by freezing it, with the juices.

My New Comfort Food Meal

When I shop for perishables (meats, dairy, produce, bakery dept) I want things that are fresh, organic or antibiotic-free, and locally raised or grown.  This has changed for me over the years, as I’ve become a mom and been more environmentally aware and health conscious.  I love cooking with chicken since it is easy and healthy.  For me, as a diabetic, I also like that this is low-carb and something that is delicious.  As I change my comfort foods have changed from sweets to fresh and healthy meals.  I now have a salad with every dinner.  I have a garden in my backyard to get fresh and organic ingredients. I try to cook at home and not eat out.  Having a new comfort food of easy tacos makes meal planning easy and dinner times is something I can do on busy days while keeping the meal healthy.  Foster Farms inspires me to search Pinterest and other places for recipes to make at home for my family.

This is an easy recipe for Crockpot Chicken Noodle Soup you can make ahead for a nice cozy soup dinner.  My kids love it with grilled cheese.  I always make extra to save for later or freeze (if it lasts that long).  The prep time is only 15 minutes and then most of the work is just letting it cook!  Great for meal planning on busy days.  You can also get creative.  Add more of one or less of another ingredient depending on your taste.

Chicken Noodle Soup Ingredients

Printable recipe is at the bottom.

1 1/2 lbs boneless skinless chicken breasts.

2 cups carrots  I used baby carrots and cut them in 1/2 since that is what I had in the house.

1 medium yellow onion

3 stalks celery.

4 cloves of garlic.

3 Tablespoons of EVVO (extra virgin olive oil).

Salt and pepper to taste.

6 cups chicken broth.

1 cup water.

2 cups pasta or egg noodles.

Instructions

Spray crockpot with non-stick spray and layer 3-4 chicken breasts at the bottom.

Ingredients

  • 1 1/2 lbs boneless skinless chicken breasts.

  1. Add into large crockpot: Chicken flat at the bottom.
  2. Top with carrots, onion, celery, garlic and olive oil.
  3. Add chicken broth, water and seasoning. Remember- liquids do not evaporate from a crock pot so don't use too much).
  4. Cover and cook on low 3-4 hours.
  5. Remove chicken breasts from crockpot. Cut into small pieces and put back into the crockpot.
  6. Add Egg noodles to the crockpot.
  7. Cook 10 minutes.
  8. Serve in bowls.
  9. *If using regular pasta it cooks better if you put it in a pot with boiling water, cook according to instructions, remove when al dente and add into the crockpot with the other ingredients.
