Chocolate Peanut Butter Scotcheroos

 I love creating new recipes or finding one I like and modifying it a little bit to add my own flair or something I know the kids will like better.  This often means taking a recipe and just tweaking it a little bit.  I received some syrup from Lori’s Salt Caramel Syrup and while I know my kids would love it on waffles and pancakes I thought it’d be great to all create something new.  This recipe was easy to make and it was a big hit at my potluck.  It is like a newer- fancier- rice crispy treat.  You can get your own The French Connection Lori’s Salt Caramel Syrup on Amazon for only $12 a bottle.  It is made with 4 ingredients and is great for waffles, pancakes or adding to a dessert mix, like the printable recipe below.


Easy list of ingredients, Rice Krispies Cereal, chocolate chips and butterscotch chips, peanut butter and some of Lori’s Caramel Syrup.2016-01-28 13.41.36 Melt Sugar and Syrup on the stove, bringing to a boil and then removing from heat.  Add peanut butter and mix and then add cereal and mix.2016-01-28 14.10.35 Add mixture to 9×13 pan and squish down the the back of a spoon.2016-01-28 14.18.05 Melt chocolates together and spread over the top.

Chocolate Peanut Butter Scotcheroos


  • 1 Cup Syrup
  • 1 Cup Sugar.
  • 1 Cup Creamy Peanut Butter.
  • 6 Cups Rice Crispy Cereal.
  • 1 cup milk chocolate chips.
  • 1 cup butterscotch chips.
  • 1 Tablespoon white chocolate chips* Optional
  • 1 teaspoon olive oil.


  1. Cook the syrup and sugar together in a large sauce pan. ALL the ingredients will be added into this pan so make sure it is big enough for over 11 cups of ingredients.
  2. Cook over medium heat, stirring frequently, until sugar is dissolved.
  3. Bring to boil and then remove from heat.
  4. Add in peanut butter and stir well.
  5. Add in cereal and mix it up it is evenly coated.
  6. Pour into greased 13x9 pan and pat down with the back of a spoon so it is all even.
  7. Mix chocolate and butterscotch chips in sauce pan on low heat until fully melted. I added a little olive oil to make it smoother.
  8. Spread melted chocolate over cereal mix.
  9. Melt white chocolate chips and drizzle them over the top of the mix.
  10. Let cool for 1 hour.
  11. Cut into bars and enjoy.
